📖 Salaw machu kroeung

INGREDIENTS:
▫️ 1 lb beef Chuck roast or pork spareribs
▫️ 1/4 lb honeycomb beef tripe; Soaked in vinegar. Scrub with salt & rinsed
▫️ Water spinach; Cut stalks into 2”
▫️ 4 stalks celery; Cut in pieces
▫️ 5 C water
▫️ Water for tripe
▫️ 5 tbsp kroeung mix
▫️ 1 tbsp salt
▫️ 1 tbsp tamarind soup base
▫️ 1 tbsp chicken powder mix (for meat seasoning)
▫️ 1/4 C chicken powder mix
▫️ 1 tbsp fermented mud fish (creamy)
▫️ 1/4 C basil or hot basil
▫️ 2 tbsp fish sauce
▫️ Thai eggplants
▫️ 2.5 tbsp sugar
▫️ 1/8 tsp msg
▫️ Jalapeños

INSTRUCTIONS:
▫️ In a medium pot; Add water. Let the water come to a rolling boil. Add in the tripe. Let cook for 15 minutes. Drain & rinse. Cut into bite sized pieces. Cut beef into bite sized pieces. Combine the beef & tripe into a large pot with no heat on. Add kroeung, salt, tamarind soup base, 1 tbsp chicken powder mix. Mix well.

▫️ Add 5 C water. Cover pot with lid. Let it come to a rolling boil. Add water spinach stalks, jalapeños, eggplants & celery. Add msg, sugar, fish sauce, fermented mud fish & 1/4 C chicken powder mix. Mix & taste. Adjust to your taste. Once veggies are cooked; Add in the rest of the water spinach leaves & basil. Stir. Turn off heat. Ready to serve with rice.
