📖 CANH BAU NAU TOM (OPO SQUASH WITH SHRIMP SOUP)

INGREDIENTS:
▫️ 1 large opo squash
▫️ 5 minced shrimp (I didn’t mince mines this time)
▫️ 4 C water
▫️ 1 tbsp minced garlic
▫️ 1 tbsp oil
▫️ 1 chopped green onion
▫️ 1/2 tsp sugar
▫️ 1 tsp salt
▫️ 1/4 tsp chicken seasoning
▫️ 1 tbsp fish sauce
▫️ Dash of black pepper

INSTRUCTIONS:
▫️ Cut ends, peel & wash squash. Cut in fourths lengthwise. Then cut in small pieces.

▫️ In a pot on medium heat; Add oil & garlic. Sauté for a few seconds. Add shrimp.

▫️ Stir until shrimp is pink. Add water & let it come to a rolling boil.

▫️ Add squash. Let cook for 5 minutes.

▫️ Add sugar, salt, chicken seasoning, fish sauce & black pepper. Mix altogether.

▫️ Turn off heat. Add green onions & stir. Ready to serve.
