📖 Ca kho to (Caramelized catfish)

INGREDIENTS:
▫️ 8 catfish steaks
▫️ 2 tbsp garlic; Minced
▫️ 3 shallots; Thinly sliced
▫️ 1 can coco Rico soda
▫️ 1/2 C hot water
▫️ 3 tbsp fish sauce
▫️ 1 tbsp sweet soy sauce (ABC brand)
▫️ 2 tbsp sugar
▫️ 1 tsp black pepper
▫️ 2 Thai chili
▫️ 1 tbsp oil
▫️ 1 green onion; Chopped

INSTRUCTIONS:
▫️ On medium heat; Add oil & shallots. Stir for a few seconds. Add garlic & stir for a few seconds.

▫️ Add Thai chili, fish sauce & sugar. Mix well.

▫️ Add sweet soy sauce & black pepper. Mix well.

▫️ Add catfish steaks to the pot. Let cook for 4 minutes. Flip fish over. Pour in the coco Rico soda & water. Let it come to a boil. Skim off the foam & discard.

▫️ Turn off the heat. Top it off with green onions. Serve with jasmine rice.
